Surprisingly Delicious Popcorn Recipes

Cuddle up and watch a movie,
With some popcorn that’s super groovy!
From caramel to chocolate and even cheese,
Tasty and easy to make – ooh yes, please!

Olive Oil, Cheese and Herb

Ingredients:

3-4 Tablespoons olive oil, or enough to coat the bottom of the pan
35g jumbo popcorn kernels
35g grated Parmesan cheese
1 tablespoon salt
Herbs of choice

This super easy but incredibly yummy popcorn recipe is perfect for cheese lovers! All you’ll need for this one is 3/4 tablespoons of olive oil, popcorn kernels, grated Parmesan cheese and some herbs of choice… rosemary normally works really well with this one!

Add the oil to your pan on medium heat, throw in a few kernels and then cover whilst they pop. Next, add the remaining kernels to form a single layer at the bottom. Cover and shake the pan to make sure all of the kernels are coated and keep on cooking! Once all of your kernels are popped, add them to a large bowl straight away and sprinkle on your Parmesan and herbs. Toss to mix them all together and voila!

Chocolate, Fudge and Marshmallow

Ingredients:

A few bars of your favourite chocolate
Marshmallows to taste
Peanuts to taste
Fudge (cut into small cubes) to taste
A bag of sharing popcorn

This dangerously indulgent popcorn recipe is perfect for those of you with a sweet tooth and works best on ready-made popcorn! All you’ll need is your popcorn, peanuts, a handful of mini marshmallows and a large bar of plain chocolate… or two!

Simply place your popcorn on a greased baking tray. Break up your chocolate bar into smaller sections and sprinkle them on top of your popcorn with the marshmallows and peanuts. Bake on 200 degrees for 5 minutes and then let it stand for a further minute. Toss to mix it together, let it cool and store in an airtight container. Then get stuck in!

Peanut Butter

Ingredients:

2 bags of microwave popcorn, already popped
100g margarine or butter
150g brown sugar
100 – 150g smooth peanut butter – this depends on taste!

Peanut butter is one of my guilty pleasures, so when I found this recipe whilst browsing Pinterest I just knew I had to give it a go!

For this, simply add your margarine, brown sugar and peanut butter into a microwave friendly bowl. Microwave for one minute at a time, making sure to stir frequently until the mixture has completely melted. Then, add all of your ready-made popcorn into the bowl (being sure to pick out those pesky unpopped kernels!) and coat evenly. Finally, add your coated popcorn to a baking tray and cook for 20 minutes at 225 degrees. Yum!

Caramel

Ingredients:

85g butter
340g muscovado sugar
112ml of corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Popcorn

Okay, so this one is technically a classic, but how could you not include caramel popcorn? It’s so easy to make!

Simply pop your popcorn into a large bowl (making sure it doesn’t fill over 2/3 or it’ll be a tricky one to mix!) and melt your butter in a pan on medium heat. Stir in the sugar, corn syrup and a teaspoon of salt. Bring your mixture to a boil and be sure to stir constantly! Then boil without stirring for approximately four minutes and then pour the liquid over your popcorn.

Line two baking trays with parchment and distribute your popcorn onto them. Bake for 15 minutes at 250 degrees, stirring occasionally. Once cooked remove, leave to cool and break your batch up into pieces. Enjoy!
