Easy Energising Snacks for Sporty Kids

Apple and Pecan Energy Bars

Apple and Pecan

250g of pecan nuts
180g of rolled oats
150g of dates
150g of raisins
250g of apples, chopped

Roughly chop the pecan nuts and oats and toast in a pre-heated oven for about 5 – 10 minutes at 180 degrees. While that’s cooking line a baking dish with greaseproof paper. Take the nuts and oats out of the oven and put them in a food processor with the dates, raisins and a pinch of salt and give them a quick whizz. Then, roughly chop the apples, add them to the food processor and give it another whizz. Pour the mixture into the dish and level out with a wooden spoon or spatula, then bake for 15 – 20 minutes.

Raspberry Oat Bites

180g of caster sugar
180g of rolled oats
1 can of raspberries in syrup
180g of butter
230g of self-raising flour

Mix the butter and flour together, then mix in the oats and sugar. Remove the raspberries from the syrup but don’t throw it away. Press half of the mixture into a lined baking dish and add the drained fruit, pressing it into the oat mix with the back of a spoon. Then add the rest of the mixture on top and level. Drizzle the syrup on the top and then bake for 15 minutes in an oven pre-heated at 200 degrees.

TOP TIP: Don’t have canned raspberries? This recipe works just as well with fresh raspberries, just add a sprinkling of sugar to get the same sweetness.

Ham and Cheese Twists

150g of grated cheese
200g of ham cut into small squares
350g of puff pastry
250g of mashed potato

Mix the mash and cheese together in a bowl and then spread thickly onto a sheet of puff pastry. Layer on the ham pieces then roll the pastry up and cut into slices. Bake in an oven pre-heated at 200 degrees.

TOP TIP: Add a dollop of ketchup on the mash before you put the ham on for an even tastier treat!

Simple Peanut Squares

150g of peanut butter
190g of honey
300g of oats

Melt together the peanut butter and honey, then stir in the oats and mix well. Leave to sit for 5 minutes while you line a baking tray with greaseproof paper. Pour the mixture in the tray and level out. Leave to set in the fridge for 40 minutes then cut into bitesize squares.

TOP TIP: For an even naughtier treat, half dip your squares in melted chocolate and leave to cool in the fridge.

Super Power Smoothie

350ml of milk
100g of oats
150g of frozen mixed berries
1 banana
2 tbsp plain yoghurt

Simply put all the ingredients into a food processor and blend together!

TOP TIP: Freeze in lollypop moulds for a cool fruity treat!
