Brilliantly boozy ice lollies

It’s warm and sunny and everyone’s jolly,
Why not cool off with a naughty but nice alcoholic lolly!
Mum and Dad will enjoy this treat,
Fruit and fizz, they’re wonderfully sweet!

Gin and Tonic

My favourite drink also makes a delicious ice lolly!

What you will need:

700ml Tonic Water
50ml Gin
Juice of 1 lime
A handful of cucumber slices

How to make:

Mix all the liquids together in a bowl.

Place the cucumber slices into the ice lolly moulds.

Place in freezer and leave overnight.

Mojito Lollies

I find mojitos so refreshing and this recipe makes the perfect ice lolly flavour.

What you will need:

Juice of 9 limes
300ml Soda Water
A handful of mint leaves
100g sugar
50ml rum (dark or light)

How to make:

Mix the sugar and lime juice together until the sugar has dissolved.

Mix in the soda water, mint leaves and rum.

Pour into moulds and freeze overnight.

Pimm’s

Pimm’s is the perfect summer drink and this ice lolly also looks great too.

What you will need:

250ml of Pimm’s
700ml Lemonade
A handful of strawberries
1 lemon sliced
A handful of mint leaves
A handful of cucumbers

How to make:

Mix all the liquids together.

Divide the fruit up into the ice lolly moulds.

Pour the liquid over the fruit.

Place in freezer and leave overnight. 

Pina Colada

I always imagine that I am on a beach when I have a pina colada. This fruity and creamy ice lolly is so delicious!

What you will need:

75g caster sugar
Juice of 1 lime
160ml can of coconut cream
½ a small pineapple, peeled and chopped into pieces
50ml of rum (light or dark)

How to make:

Mix the sugar and lime juice together until the sugar starts to dissolve and then mix in the coconut cream.

Divide the pineapple pieces up into the moulds.

Pour in the mixture.

Place in freezer and leave overnight.

Baileys

These ice lollies are creamy and a little bit naughty.

What you will need:

110ml whipping cream
275ml milk
3 tablespoons of instant coffee
2 tablespoons of sugar
½ teaspoon of vanilla extract
50ml Baileys

How to make:

Place all the ingredients apart from the Baileys into a saucepan and simmer.

Stir until ingredients are combined and then allow the mixture to cool.

Mix in the Baileys.

Pour into moulds and leave overnight.
