Fancy and Fun Pancakes

Shrove Tuesday is here and time to have some fun making yummy pancakes with the kids. Here are some cool tasty creations that we have made, so give them a go at home and tell us what you think.

I used an American pancake recipe as they are easier to make fun shapes, and also taste yummy!

What you need:

  • 140g self raising flour
  • 1/2 tsp salt
  • 2 tbsp caster sugar
  • 140ml milk
  • 1 large egg, slightly beaten
  • Olive oil or butter for cooking

For decorating:

  • Chocolate (melted)
  • Raisins
  • Icing Hearts
  • Chocolate drops
  • Blueberries

Method:

I used a variety of circular cookie cutters to create different parts of the following designs, if you don’t have the cookie cutters just use an upside down bowl or cup depending on the size you want 🙂

1) Weigh out your ingredients.
2) Sift the flour, baking powder, salt and caster sugar into a large bowl.
3)  Lightly whisk together the milk and egg.
4) Pour the milk mixture into the flour mixture and then beat with a fork until you have a smooth batter. Any lumps you might have will soon disappear with a little mixing.
5) Let the batter stand for a few minutes.
6) Heat pan with a little oil (the pan has to be very hot) and then add one ladle of mixture and spread into a circular pattern.
7) Using a spatula flip the pancake after the bottom has browned slightly and cook until both sides are browned and the pancake is cooked in the middle.

Cook up a batch, keep them warm in the oven and then decorate as variety of pancake animals and shapes. 

Strawberry Sunshine


I used the largest cookie cutter to make the perfect circle centre for the sun, feel free to eat the off cuts!
Then simply slice three strawberries thinly to make the rays, placed them around the pancake and accessorise with blueberries and chocolate bits.

Use a large cookie cutter to make the perfect round face.  Select a smaller cutter to cut to circles, one for the the nose and one for the ears.  Cut the ears circle in half to leave you two semi-circles.   I used chocolate bits for the eyes but raisins work just as well and the nostrils are my trusty icing hearts.

Pancake Ladybird


Using the large round circular cookie cutter for the body, and then again on another whole pancake for the wings.  Slice the second circle in half and place them slightly opened, as wings on the body pancake.  The head is a medium sized cookie cutter shape and I used melted chocolate and icing hearts for the eyes and antennae.  The spots are chocolate bits- yummy!

Pancake Cat

This one is a little more time consuming, but the little ones loved it!
Again use the large cookie cutter for the face shape, then 2 1/2 small circles to make the cheeks and mouth.  For the ears I used a knife to cut two triangles and as I had some burnt pieces, I cut two smaller triangles for the inner ears. The eyes are slices of banana with raisins for the pupils and I drew the whiskers and mouth detail using melted chocolate and a fork.

You could also make a range of faces like these using ingredients you already have in the fridge and cupboards.
