Chocolate Christmas Pudding Recipe

You will need:

⭐️125g chocolate
⭐️35g  butter
⭐️200g Madeira/ sponge cake
⭐️2 tbsp icing sugar
⭐️‘Holly’ icing decorations

Method:

1. Break the sponge cake into crumbs (perfect job for small hands!) and place in a bowl
2. Break up the chocolate and place in a bowl, melt by putting the bowl over a pan of simmering water
3. Add in the butter and stir until liquid
4. Pour the mixture into the cake crumb bowl and mix
5. As the chocolate cools create round ‘balls’ using your hands
6. Put the balls on some greaseproof paper and place in the fridge to cool for at least 1 hour
7. Once cooled mix the icing sugar with some water and drizzle over the top, decorate with icing holly decorations
8. Pop in the fridge to keep cool until you are ready to serve them!

⭐️ If you want to add a bit of extra taste, raisins or chopped nuts taste yummy when added to this recipe! ⭐️

Mince Pie Brownies

You will need:

⭐️185g unsalted butter (cubed)
⭐️185g dark chocolate chopped
⭐️85g plain flour
⭐️40g cocoa powder
⭐️3 large eggs
⭐️275g golden caster sugar
⭐️6 mince pies
⭐️icing sugar (for dusting)

Method:

1. Melt the butter and chocolate in a bowl over a pan of simmering water and stir occasionally. Once melted, leave the mixture to cool.
2. Heat the oven to 180C/160C fan/gas. Then, line the base of a 20cm square tin with baking parchment.
3. Sieve the flour and Cocoa into a medium-sized bowl. Whisk the eggs and sugar with an electric mixer until it has a thick and creamy consistency.
4. Pour in the cooled chocolate mixture, then fold together with a rubber spatula in a figure of eight! The mixture should turn dark brown.
5. Sift in the cocoa and flour mixture and continue gently folding. The mixture should look dry and dusty, then fudgy.
6. Spoon a little mixture into the tin you prepared earlier, then add the mince pies (leaving them whole). Scrape over the rest of the mixture, easing it between and over the pies and leveling the top.
7. Pop in the oven for 25 minutes. If the brownie mixture is still wobbly in the middle, bake for a further 5-10 minutes! Take out the oven and leave to cool.

Rocky Road Cheesecake Pudding

You will need:

⭐️2 x 200g ready-made chocolate loaf or marble loaf cakes
⭐️225ml double cream
⭐️150g dark chocolate, finely chopped
⭐️2 tbsp golden syrup
⭐️50g white chocolate
⭐️edible glitter, chocolate truffles, sprinkles and sparkles, to decorate
⭐️2 x 280g tubs full-fat cream cheese – Filling ingredient
⭐️200ml double cream- Filling ingredient
⭐️75g icing sugar- Filling ingredient
⭐️2 tsp vanilla bean paste or extract- Filling ingredient
⭐️½ orange, zested- Filling ingredient
⭐️150g dark chocolate – Rocky road ingredient
⭐️75g butter– Rocky road ingredient
⭐️1 tbsp golden syrup– Rocky road ingredient
⭐️75g digestive biscuits– Rocky road ingredient
⭐️25g pretzel pieces– Rocky road ingredient
⭐️50g mini marshmallows– Rocky road ingredient

Method:

  1. Use cling film to completely cover a 2-litre pudding bowl. Slice the cakes lengthways and line the bowl with them.
  2. Mix all the filling ingredients with a whisk or a fork. The pasta will need to be thick but slightly smooth. Fill the previous bowl with it, leaving some space for the rocky road to go on top.
  3. Use the chocolate from the rocky road and break it into small pieces. Add the butter and the golden syrup from the rocky road ingredients. Heat some water in a pan and set the bowl over it until melted.
  4. Crush the biscuits into crumbs. Add the crumbs to the chocolate mix. Add the pretzels and marshmallows. Mix again with a fork, whisk, or spoon. Add this on top of the cheesecake.
  5. Put the chocolate and golden syrup in a pan. Heat until melted. Use a wire rack or cooling rack to place the cheesecake on top of it. Pour over the chocolate mixture. Chill until everything has cooled down and set.
  6. Add more chocolate over the top of the cheesecake and decorate with anything you would like!

Christmas Muffins

You will need:

⭐️125g unsalted butter
⭐️250g self-raising flour
⭐️1 tsp bicarbonate of soda
⭐️200g golden caster sugar
⭐️2 tsp cinnamon
⭐️¼ nutmeg, freshly grated
⭐️150g natural yogurt
⭐️1 tsp vanilla extract
⭐️2 medium eggs
⭐️1 orange, zested and juiced
⭐️150g chocolate (white, milk or dark), chopped
⭐️50g dried cranberries
⭐️50g icing sugar

Method:

  1. Get 12 muffin cases and line a muffin tray with them. Heat the oven to 180C/160C fan
  2. Use the microwave to melt the butter and allow it to cool. Make a mix of cinnamon, sugar, bicarb, flour, and nutmeg with half a teaspoon of salt.
  3. Take the melted butter and add yoghurt, vanilla, and eggs. Mix with a whisk or fork. Add this mix to the previous. Add orange zest, dried cranberries and chocolate. Mix again thoroughly.
  4. Add the mixture to the paper cases. Bake for 30 minutes.
  5. Remove the muffins from the oven. Mix orange juice and icing sugar to make the icing. Add this to each muffin.

Christmas Crumble

What you’ll need:

⭐️1kg apples, peeled, cored and chopped
⭐️150g frozen cranberries
⭐️1 tsp ground cinnamon
⭐️½ tsp mixed spice
⭐️75g caster sugar
⭐️125g plain flour – Crumble ingredient
⭐️100g cold unsalted butter, cut into cubes– Crumble ingredient
⭐️50g caster sugar– Crumble ingredient
⭐️½ tsp mixed spice– Crumble ingredient

Method:

1. Get a baking dish that is roughly 22cm squared. Add cranberries, spices, apples, and sugar. Mix thoroughly and heat oven to 200C/180C fan
2. Rub butter and flour together with your hands. It needs to feel like breadcrumbs. Add in the sugar and mixed spices. Add this mix to the previous. Bake for 35-40 minutes. Make sure it’s golden before taking out and leaving to cool.
